Tender Flat Iron Steaks are the newest cut, discovered by research at the University of Nebraska in Lincoln. The flat iron muscle was found to be the tenderest muscle in the beef. A boneless cut from the chuck, Flat Irons are leaner than Rib eyes, NY Steaks, & T-bones, but with the exceptional tenderness found in these more marbled cuts. Flat Irons are difficult to find in most grocery stores, and are usually available at high end steak houses--but you can order them here! Steaks are 12 oz. each.
